An NHS surgeon has shared what he calls the 'ultimate' homemade bread recipe, promising such impressive results that you might never buy a shop-bought loaf again. Dr Karan Rajan, a gastrointestinal surgeon and lecturer, revealed his simple yet nutrient-packed recipe in a viral TikTok video that has captivated home bakers across the UK.
The Nutritional Powerhouse Loaf
Dr Karan's recipe is designed not just for taste but for significant health benefits, particularly for gut health. Each slice of this homemade bread contains an impressive 10 grams of protein and 6 grams of fibre, achieved without relying on commercial protein powders. The medic explained that this nutritional profile makes it an ideal choice for the winter months, a period often associated with indulgence, as it helps support digestive wellness.
Key Ingredients For Success
The recipe's magic lies in its clever use of simple, wholesome ingredients. Greek yoghurt is a star component, contributing 15 grams of protein and introducing beneficial lactic acid bacteria that improve the bread's digestibility. Bread flour forms the base, providing a substantial 60 grams of protein and 20 grams of fibre to the entire loaf.
Dr Karan uses a pinch of sugar not for sweetness, but to 'wake up' the yeast. This process acts as a substrate where the sugar is consumed by the yeast, creating carbon dioxide that helps the bread rise. For preparation, he recommends greasing the loaf tin with extra virgin olive oil, noted as one of the best anti-inflammatory fats for the gut lining.
The final flourish is a combination of pumpkin and sunflower seeds scattered on top, adding both insoluble and soluble fibre plus omega-3 fats to further support gut health. A gentle rising period helps break down the starches in the dough, making the final product easier on the digestive system.
Overwhelming Positive Response
Dr Karan's video demonstration has resonated widely, racking up more than 75,900 views and attracting 5,551 likes alongside 79 comments from enthusiastic viewers. One commenter, Deniz, posted: "Looks amazing! Now to watch it again & write down the ingredients." Another viewer, Tobias, said, "That bread looks soo yummy, very useful vid - thanks for posting," while Gabrielle added, "Omg this looks so good."
The surgeon was so confident in his creation that he asserted in his video, "This is my ultimate homemade bread, and I'm never buying store-bought bread again." For those looking to replicate his success, the full recipe is detailed below.
Dr Karan's Homemade Bread Recipe
Ingredients:
- 150g Greek yoghurt
- 7g yeast
- Pinch of sugar
- 500g bread flour
- Pinch of salt
- 2 x Loam Fibre sachets
- 50g pumpkin and sunflower seeds
- Warm water
Method:
Add a cup of warm water to a bowl, then the Greek yoghurt, yeast and sugar. Let the mixture sit for an hour so the yeast can activate.
In another bowl, combine the bread flour, salt and Loam Fibre sachets, mixing well. After the wet ingredients have rested for an hour, add them to the dry mixture.
Combine and knead using a wooden spoon until you have soft, sticky dough. Put the dough somewhere warm for one to two hours.
Oil a loaf tin with some extra virgin olive oil. When proving time is complete, transfer the dough into the loaf tin and brush with a flour and water paste.
Scatter the seeds on top. Pop it in the oven at 200℃/400℉ for half an hour.
Once baked, serve it as toast or in sandwiches. You can also freeze this bread to enjoy at a later time.
