Endo Kazutoshi, one of the world's greatest chefs, spent decades climbing to the top of the culinary world. However, a devastating fire threatened to destroy everything he had built. In the aftermath, I joined him as he travelled around his homeland, visiting the people who helped make him the master he is today.
A Journey Through Japan
The journey took us to various regions of Japan, where Endo reconnected with the fishermen, farmers, and artisans who supply his renowned sushi restaurant. Each stop revealed the deep bonds between the chef and his suppliers, highlighting the importance of trust and quality in Japanese cuisine.
Revisiting Roots
Endo's pilgrimage began in Tokyo, where he trained for years under his father. From there, we ventured to the coastal towns where he sources the finest fish, and to the countryside where the best rice and vegetables are grown. Along the way, Endo shared stories of his early struggles and the philosophies that guide his cooking.
The fire, which destroyed his restaurant's kitchen and years of accumulated tools, could have been a career-ending blow. Instead, it became a catalyst for reflection and renewal. Endo's journey was not just about rebuilding a business, but about reaffirming his connection to the land and the people who sustain his art.
Throughout the trip, Endo's passion for sushi and his respect for ingredients were evident. He spoke of the delicate balance between tradition and innovation, and how the fire had taught him the value of community. The suppliers, many of whom had worked with Endo for decades, welcomed him with open arms, offering support and encouragement.
