Frozen chips are a staple in many UK households, but they can often turn out soggy when cooked in the oven. A chef has now revealed the 'biggest mistake' that leads to limp chips, and it's a surprisingly common error.
The Main Culprit: Overcrowding
According to chef George Duran, overcrowding the oven tray or air fryer basket is the primary mistake people make. When chips are packed too closely together, they steam rather than bake, resulting in a soggy texture.
Chef David Nayfield from Che Fico agrees, emphasizing that frozen chips can rival restaurant quality if cooked correctly. He stresses the importance of giving chips enough space to crisp up properly.
Pre-Heating Is Essential
Another critical step is pre-heating your appliance. Placing chips into a cold oven or air fryer often leads to uneven cooking and sogginess. Nayfield recommends heating the appliance to around 200°C before adding the chips to achieve a golden, crunchy texture.
Air Fryer vs. Oven
When it comes to choosing between an air fryer and a conventional oven, chefs have a clear preference. Duran describes the air fryer as a 'fast-track to crispy heaven,' noting that it cooks chips faster and eliminates the risk of burns from hot oil, making it a safer option.
Extra Flavor with Simple Seasoning
For added taste, chef and cookbook author Kelly Jaggers suggests a homemade seasoning mix. Combine one teaspoon of onion powder, half a teaspoon of paprika, a quarter teaspoon of garlic powder, and an eighth of a teaspoon of cayenne pepper. Mix well and sprinkle over hot chips along with salt for a delicious, cost-effective alternative to pre-seasoned fries.
