Rick Stein's Simple Suppers cookbook offers a straightforward garlic chicken traybake that can be prepared in under 10 minutes and baked in 35 minutes. The dish features crispy chicken thighs, soft vegetables, and roasted potatoes in a garlic sauce.
To make the traybake, preheat the oven to 200°C Fan. Fry chicken thighs in a little oil until golden brown. Meanwhile, mix garlic, thyme, and olive oil in a bowl. Arrange sliced courgette, fennel, and potatoes in a roasting tin, drizzle with two-thirds of the garlic oil mixture, and season with salt and pepper.
Place the browned chicken thighs on top of the vegetables, skin-side up, and drizzle with the remaining garlic oil. Season the chicken with salt and pepper. Bake for 35–40 minutes until the chicken skin is crispy and the vegetables are tender.
