Why Worcestershire Sauce Works
Baked beans are typically sold in a sweetened tomato sauce with little seasoning, which can taste bland over time. Worcestershire sauce is acidic and adds a deep umami flavour that balances the sweetness. Katherine McPhillips, who conducted the experiment, said: 'It adds so much flavour without doing much at all.'
The sauce also contributes spicy and salty notes, making each bite more satisfying. It transforms a simple, cheap meal into something to look forward to, using ingredients likely already in the kitchen.
How to Make Enhanced Baked Beans
To prepare, toast two slices of bread. Empty a can of baked beans into a pot and heat on medium. Once simmering, add one teaspoon of Worcestershire sauce and black pepper. Optional extras include smoked paprika or other herbs. Stir for two minutes until bubbling, then remove from heat.
Butter the toast, pour the beans on top, and sprinkle with grated cheese. Add a few drops of Worcestershire sauce over the cheese, then place under a grill or in an oven preheated to 200°C for two minutes until the cheese melts and bubbles. The result is a hot, comforting dish ready in under five minutes.

McPhillips noted that July is National Baked Bean Month, inspiring her to experiment with condiments. Worcestershire sauce emerged as the clear winner, making beans on toast 'a lot tastier.'
