According to the passionate culinary icon, adding a spoonful of crème fraîche at the very end of the cooking process elevates the dish to a "completely different level". He explains that folding the cream into the pan cools it down, minimising the risk of overcooking, while rendering it considerably creamier, richer and more delicate.

Additional Enhancements

However, the chef doesn't conclude there. To elevate the dish even more, Ramsay will also scatter freshly chopped chives on top. While it may appear to be a straightforward garnish, he explains that the chives slice through the luxurious, buttery richness of the eggs and the cream, introducing a pungent, onion flavour that enhances the eggs.

The "On and Off the Heat" Technique

The triumph of his recipe is fundamentally based on Ramsay's renowned "on and off the heat" technique. He also recommends against whisking the eggs before placing them in a pan.

Ramsay cracks them straight into a cold pan with knobs of butter and stirs constantly. Speaking on a previous episode of Good Morning America, where he offered a tutorial on cooking scrambled eggs, he said: "Never whisk an egg before it goes into the pan before it goes in to the pan either".

Describing his approach, he continued: "See how I'm clearing [the sides of the pan]. Now come off the heat, then we continue stirring. You know why? Because they continue to cook."

Through repeatedly shifting the pan on and off the heat, the cook retains complete control over the texture, producing those distinctive small, glossy curds.
