Egg salad sandwiches are a classic lunchtime favourite, but they can be made healthier and more flavourful with a simple swap. Food experts suggest mixing mayonnaise with Greek yoghurt to create a lighter, tangier spread that transforms ordinary egg sandwiches into a nutritious meal.
Why Add Greek Yoghurt?
Greek yoghurt is made from cow's milk that is strained to remove the whey, resulting in a thicker consistency compared to natural yoghurt. It also has a tangier flavour and can often be used as a healthier substitute for mayonnaise, sour cream, or crème fraîche. According to BBC Good Food, Greek yoghurt is an excellent source of protein and tends to be lower in fat and calories than mayonnaise, making it a healthier choice without sacrificing taste.
Perfect Ratio for Balance
Food experts advise using a 50/50 ratio of mayonnaise and Greek yoghurt in an egg sandwich. Substituting mayonnaise entirely with yoghurt can make the dish overly sharp, and Greek yoghurt alone can leave the bread soggy due to its water content. Using equal measures of both achieves the perfect balance of flavour and texture.
Cook and recipe developer Shayma Saadat explains: "Egg salad can be rich—sometimes too rich. That's where yoghurt comes in, offering tang and contrast. It cuts through the heaviness of mayo, which, on its own, can make egg salad feel dense. Yoghurt not only lightens the egg salad but also improves the texture, making the salad smoother. That's why I mix the two; I let them work together for the best balance."
Tips for Best Results
- Start with a 3:1 ratio of mayo to yoghurt if you're new to the idea.
- For a lighter and tangier egg salad, go for a 1:1 ratio.
- Use full-fat Greek-style yoghurt, not low-fat or runny varieties.
- Avoid sweet or flavoured yoghurts.
- Stick to cow's milk Greek yoghurt; goat or sheep's milk may add unwanted grassiness.
Shayma adds: "Not all yoghurts are created equal, and this isn't the place for low-fat or runny ones. If you're using yoghurt in egg salad, it has to be thick, full-fat, and preferably Greek-style. Anything thinner will make your salad loose, and you definitely don't want to use anything sweet or flavoured."
By incorporating Greek yoghurt into your egg salad, you can enjoy a healthier, tangier, and smoother sandwich that feels brighter and more balanced. This simple ingredient upgrade is a game-changer for egg salad lovers.
