A mother has demonstrated that it is possible to feed a family of three dinner for over a week with just £20 spent at Iceland Food Warehouse. Abigail Nicholson, a content editor, took on the challenge amid the ongoing cost of living crisis that has pushed grocery prices higher.
The £20 Family Meal Challenge
With careful planning, Nicholson visited her nearest Food Warehouse to secure the best deals. She aimed for a variety of meals including vegetables. Her strategy began with Iceland's 8 products for £10 deal, which she used to purchase Aunt Bessie's Skin On Homestyle Chips, Richmond thick pork sausages, Pukka Pies chicken and vegetable variety, Birds Eye battered fish fillets, Birds Eye breaded cod fish cakes, chicken dippers, and two Goodfellas pizzas.
She also took advantage of a three frozen vegetables for £5 deal, selecting carrots and broccoli. From the chilled section, she bought a cheese blend of cheddar and mozzarella for £2.50 and a three-pack of onions for £1. In the ambient aisle, she picked up tagliatelle for £1.25 and Uncle Ben's long grain rice for £1. With 50p left, she treated herself to a chocolate flapjack.
Meals Prepared
Using these ingredients, Nicholson prepared toad in the hole with chips and vegetables, homemade fish or chicken katsu curry with rice and chips, cheesy broccoli tagliatelle, pizza night, pie with chips and vegetables, and fishcakes with chips and greens. The menu balanced quick suppers for busy evenings with more wholesome dishes when time allowed.
Throughout the week, the family enjoyed the meals, and Nicholson was surprised by the amount of leftover food. While broccoli ran out quickly, carrots and tagliatelle lasted longer than expected. The cheesy broccoli pasta sauce served not only for dinner but also for three additional lunches while working from home. Similarly, the katsu curry sauce could have yielded six full portions with more rice.
Nicholson concluded that dinners do not have to be fancy or expensive; with just £20, it is possible to get nutritious and satisfying meals. The challenge highlights effective budgeting strategies for families during the cost of living crisis.
