What Is Yeast?
Yeast is a single-cell organism that requires food, moisture and warmth to thrive. It feeds on sugar and starch through a process known as fermentation, producing carbon dioxide and alcohol. The release of carbon dioxide is what causes bread to rise, giving it that airy texture and slightly fermented flavour.
Active Dry Yeast vs Instant Yeast
There are two types of yeast commonly used in bread and dough recipes: active dry yeast and instant yeast. Both function in the same manner, but they differ in how they are prepared and used.
Active Dry Yeast
Active yeast refers to any form of dry yeast that requires activation prior to use. It must be combined with warm water and sugar before being incorporated into your dry ingredients, allowing the yeast to 'bloom'. This is because the organisms within active yeast remain dormant until awakened by the water and sugar. If your active yeast has been sitting in the cupboard for some time between baking sessions, it may have passed its best. You can identify expired yeast as it will not produce light, foamy bubbles in water. Active yeast has a shorter shelf life than instant yeast.
Instant Yeast
Instant yeast is ready to use from the moment you unseal the packet. It features smaller, finer granules and does not require dissolving in warm liquid beforehand; it can be mixed straight into your dry ingredients and will prove more quickly. Instant yeast can produce a lighter, fluffier bread, which is ideal for a baker who is short on time.
Which One Should You Use?
The choice between active dry yeast and instant yeast depends on your recipe and time constraints. If a recipe calls for active yeast, you can often substitute instant yeast by using about 25% less and skipping the activation step. However, for best results, follow the recipe's specified yeast type. Both yeasts will give your bread that characteristic rise and flavour, but instant yeast offers convenience and speed.
