Chef Frank Proto has shared his secret for achieving perfectly crispy fried eggs every time: the humble butter. In a demonstration on the Epicurious YouTube channel, the chef emphasised that the key lies not just in using butter, but in adding it at precise moments and in the correct quantities.

Proto explained that the first step is ensuring the frying pan reaches the correct temperature and remains well-controlled throughout. Once the pan is hot, he recommends adding just enough butter to 'grease up' the pan. After cracking the eggs and letting them cook briefly, the critical stage begins: 'Then I'm going to put a big knob of butter in here for basting. At this point, the white is nice and set around the yolk, I'm going to take my butter and baste it around,' he said.

The chef advises basting the butter around the egg white, taking care to avoid the yolk, then pausing momentarily to allow the edges to caramelise before serving. This technique, he claims, guarantees a crispy result every time.

In a separate video, Chef Brian's Kitchen shared a tip for enhancing scrambled eggs by adding mayonnaise. He explained the science: 'If you make homemade mayonnaise, it's just egg yolks that are emulsified with some oil and it turns into mayonnaise.' According to him, this addition results in an 'unbelievable soft scramble like no other'.
