A social media food influencer has captivated the internet with his simple method for creating homemade doner kebabs that rival your favourite takeaway.

The Viral Kebab Method

Food influencer MezeMike, who shares recipes from cultures worldwide with his 6,765 TikTok followers, recently posted a video demonstrating his family's method for making doner kebabs after returning from Cyprus. In the clip, which has garnered over 136,000 likes and 1,500 comments, he claimed his version surpasses the 'dry meatloaf ones' often found elsewhere.

The process begins by blending two onions into a paste and combining them with 1kg of mince (beef, lamb, or a mix). To this, he adds 50ml of olive oil, four heaped tablespoons of yoghurt, and a generous seasoning of paprika, pepper, chilli flakes, cumin, oregano, and salt.

A Unique Rolling Technique

The key to the recipe's success lies in its unique preparation. The smooth meat mixture is spread very thinly onto square sheets of parchment paper, creating a layer only a few millimetres thick. This is then rolled up tightly, placed on a baking tray, and cooked at 200 degrees for 20 minutes.

Halfway through cooking, the excess liquid is drained to prevent the meat from 'swimming'. After an initial bake, the rolls are unravelled, topped with lemon juice, and returned to the oven for a final 5-10 minutes to achieve a desirable crispiness before being served in pitta bread with salad.
