Fluffiest Scrambled Eggs: Swap Milk for Water, Home Cook Reveals

A home cook has shared a simple trick for making fluffier scrambled eggs: replace milk or butter with water. The method, which involves adding a small amount of water during cooking, creates a lighter, airier texture that has been praised by chefs and home cooks alike.

Why Water Works Better Than Milk

Foodie Kirsty, who shared the tip on TikTok, said the alternative ingredient was a game-changer. "I had never in my life heard of that and freaked out. Well, they turned out to be the fluffiest, most delicious scrambled eggs I have ever had in my life, and I'll probably never do them another way," she said. Acknowledging the technique "sounds weird," Kirsty insisted it "tastes good."

Chef Tim Bechtle of Broken Yolk Cafe explained the science: "Adding water to eggs steams the liquid, which slows the coagulation of the proteins, resulting in a looser protein network and fluffier eggs. Essentially, it adds air pockets to the scrambled eggs as you cook them." Bechtle added that cooking with water also widens the window for perfect cooking time, preventing over- or undercooking.

Chefs and Home Cooks Agree

The tip has gained traction online, with many users confirming its effectiveness. One TikTok user commented, "I've always added a lil bit of water." Another claimed, "Gordon Ramsay recommends water in the eggs vs milk. Ever since he said that - always water for me." A third user revealed, "That's how I do mine, and it's because the water evaporates or something. My great-grandma showed me."

Simply Recipes consulted multiple chefs, who overwhelmingly endorsed the method. Chef Nelson Serrano-Bahri of The American Egg Board noted, "It really comes down to the kind of scrambled eggs you're after. If you want them light and fluffy, water works very well. If you want them richer and creamier, ingredients like butter, sour cream, crème fraîche, or cheese can help take them in that direction."

How to Make Fluffy Scrambled Eggs with Water

To try the method, simply whisk eggs with a tablespoon of water per two eggs, then cook over medium-low heat, stirring gently. The water creates steam that lifts the eggs, resulting in a soft, fluffy texture without the heaviness of milk or butter. Kirsty demonstrated the softness in her video, saying, "You can tell they just look so much softer and so fluffy." She later added, "I haven't stopped doing it since the first time I tried it! Never in my life would I have thought to do that if my friend didn't show me!"
