Food experts at The Kitchn have discovered that cucumbers can remain fresh and crunchy for up to 19 days when stored using a simple method involving paper towels and a zip-lock bag. The test compared nine different storage techniques, with the winning approach involving wrapping the cucumber in paper towels and placing it in a sealed bag on an upper shelf in the refrigerator.
Cucumber Sensitivity to Cold
Cucumbers are particularly sensitive to cold temperatures. When kept below 10°C, they can suffer from chilling injuries, leading to bruises, shrivelling, and a slimy texture. Most store-bought cucumbers last about one week in their original plastic wrap, but the texture often deteriorates.
The Nine Methods Tested
The first method, leaving the cucumber on the counter at room temperature, held up well for several days but developed mouldy soft spots by day seven. The second method, storing the cucumber unwrapped in the fridge door, showed similar results with shrivelling and soft spots on day seven. The third method, keeping the cucumber unwrapped on a fridge shelf, started to shrivel after four days. The fourth method, unwrapped in the crisper drawer, resulted in withered appearance and soft spots by day seven.
Wrapping the cucumber in cling film and storing it in the fridge door extended freshness by one day compared to unwrapped, lasting until day seven before softening at the ends and becoming slimy by day eight. Wrapping in paper towels and placing in a loose bag in the crisper drawer lasted 10 days. Wrapping in cling film in the crisper drawer kept the cucumber fresh for at least 12 days, though dimpling appeared after 10 days, and it became squishy and slimy by day 12.
Storing the cucumber in a zip-lock bag with a spoon on a fridge shelf kept it firm for 11 days, with soft spots appearing on day 14 and a slimy film by day 15.
The Winning Method
The most effective method involved wrapping the cucumber in paper towels and placing it in a sealed zip-lock bag on an upper shelf in the fridge. On day eight, the paper towels were moist, but the cucumber remained pristine. By day 15, it was still perfect, and it lasted a total of 19 days before showing signs of spoilage.
The food experts noted: “The towel-wrapping method was interesting. It helped to wick away the moisture that seemed to contribute to sliminess and squishy spots, and the sealed bag seemed to offer more protection than an unsealed bag.”
Key Factors for Longevity
Moisture loss and moisture buildup both contribute to spoilage. Shielding cucumbers with paper towels or plastic wrap, or placing them in a bag, offers the longest protection. A double layer of protection—paper towels to wick away surface moisture and a sealed plastic bag to protect from the elements—keeps cucumbers fresh for an impressive duration.
