A simple flatbread recipe using just Greek yoghurt and self-raising flour has gone viral on TikTok, promising homemade bread in under 15 minutes. The recipe, shared by Nate Anthony from Bored of Lunch, requires no yeast and minimal effort, making it an ideal quick fix for bread lovers.
Cook Ellen Jenne tested the recipe and found it surprisingly effective. She noted that the dough can be a bit dry due to the yoghurt, but kneading helps bring it together. The key to perfect flatbreads is rolling the dough thin enough and heating the pan properly to achieve a puffed-up texture.
Jenne recommends using a folded tea towel to pat the dough while cooking, a technique borrowed from the Dishoom cookbook, to ensure even cooking and puffing. Each flatbread takes just two to three minutes per side in a medium-high pan.
The recipe's versatility is a major draw—flatbreads can be used for sandwiches or served alongside curries. Leftover dough can be frozen for future use, reducing waste and saving time. Jenne suggests brushing cooked flatbreads with melted garlic butter for extra flavour when serving with curry.
This viral recipe is part of a trend using Greek yoghurt as a shortcut in bread-making, previously seen in two-ingredient bagel recipes. It offers a quick, cost-effective alternative to store-bought bread, especially for single-person households looking to avoid spoilage.
