The Secret to Perfectly Crispy Air Fryer Chips
Preparing chips in the air fryer is remarkably straightforward, requiring minimal oil and offering speedy cooking times. However, I discovered that homemade chips, particularly those made from sweet potatoes, simply refused to crisp. Regardless of how much oil I added or how high the temperature was set, achieving that satisfying crunch proved genuinely difficult.
Deep-frying would naturally deliver those results, but I was keen to replicate them without oil. After experimenting with several techniques, one method produced the crunchiest, most perfect homemade fries.
Step 1: Uniform Cutting
Firstly, ensure all the chips are cut to a uniform size. This guarantees even cooking, preventing some from burning while others turn soggy.
Step 2: The Ice Water Soak
The next step is the most crucial, and it completely transformed my fries — it involves grabbing a large bowl and filling it with water and ice cubes. Submerging cut fries in ice-cold water draws out excess starch, making them much easier to crisp. With some of the starch eliminated, the inside cooks into a lighter, softer texture while the exterior turns wonderfully crisp.
It is, however, essential to use ice-cold water, which I achieved by adding several ice cubes. I left the potatoes to soak for approximately five to 10 minutes before drying them thoroughly on a kitchen towel.
Step 3: Seasoning and Cooking
Once completely dry, I tossed them in a bowl, seasoned with salt, pepper, and paprika, then finished with a drizzle of oil. They were then placed in the air fryer basket, ensuring no overlapping, and cooked at 180°C for 20 minutes, shaking halfway through.
After 20 minutes, the chips were perfectly crispy, with a light, fluffy texture. This recipe has become my go-to side dish for a variety of meals, including chicken, and the results are absolutely delicious.
Numerous fast-food outlets, along with more upmarket restaurants, employ this very same method to maintain the freshness of uncooked fries and achieve that satisfying, crispy, fluffy finish.
