In fact, the ultra-processed food industry is worth around $1.9 trillion globally." He emphasized that struggling with food addiction is not the individual's fault, citing a patient named Chris whose persistent snacking led to weight gain despite sincere efforts to manage it.

Diabetes and Carbohydrate Intake

The documentary revealed that Chris's type 2 diabetes diagnosis was not due to high sugar consumption but rather high carbohydrate intake. Dr. Chatterjee explained, "When Chris got diagnosed with type 2 diabetes, it wasn't because he was having a huge amount of sweets. It was actually because he was eating loads and loads of starchy carbohydrates."

He provided specific examples: a small handful of pasta can impact blood glucose levels as much as six and a half teaspoons of sugar, a sandwich portion of processed white bread equals eight teaspoons of sugar, and a small portion of white rice can have the same effect as 10 teaspoons of sugar.
