There is nothing quite like brightening a gorgeous spring weekend with a sweet treat that evokes the flavours of the season. Baker and cookbook author Jane Dunn, better known as Jane's Patisserie, recently shared her cake version of a classic British dessert, perfect for anyone seeking something quick and easy to make.
A Twist on a Classic
In a recent TikTok video, she demonstrated how she transformed the much-loved Bakewell tart into a fruity and scrumptious cake. She wrote in the video's caption: "This simple sponge cake is made with almonds and fresh berries to create that amazing Bakewell flavour that is just a classic. A great recipe if you love a Bakewell tart, but are looking for a quick bake that you can whip up in no time."
Jane said: "One thing I love baking more than anything is something that I can serve with a good glug of custard. This Berry Bakewell cake is a super simple cake to bake, and it is fruity, delicious and incredibly moreish."
She added: "This sort of cake is one of those ones that you can make at any time of year, but obviously when berries are fresh, delicious and vibrant they are the best."
Simple Batter, Endless Possibilities
Jane's recipe uses a very simple batter that can be made all in one in a stand mixer. To help replicate the texture and flavour of a traditional Bakewell tart, there is plenty of flaked almonds included. You should get a "delicious and heavenly" batter before adding in the fresh berries. You can use any berries you like, which Jane described as the "charm" of the recipe. Obviously, Jane serves a slice of cake with lashings of custard, but you can eat it on its own or with any cream or ice cream of your choice.

How to Make Jane's Berry Bakewell Cake
If you are looking for a new bake to brighten up your weekend, here is how you can recreate Jane's recipe at home.
Ingredients
- 150g unsalted butter
- 150g caster sugar
- 150g ground almonds
- 150g self raising flour
- Three medium eggs
- Two tbsp whole milk (optional)
- 1/2 tsp vanilla extract
- 250g berries
- 25-50g flaked almonds
- One tbsp icing sugar
Method
- Preheat the oven to 180°C/160°C fan and grease and line a deep 8 inch/20cm cake tin.
- Add your butter, sugar, flour, ground almonds, eggs, milk and vanilla to a mixer, and beat until smooth.
- Fold the berries through the mixture, and add the mix to the tin. Or, layer half of the cake mix in the tin, sprinkle over the berries, and add the other half of the mix on top.
- Sprinkle the cake with the flaked almonds and bake in the oven for 50 minutes.
- Leave to cool on a wire rack and sprinkle with the icing sugar.
- Serve and enjoy.
