Mary Berry has plenty of dishes that are perfect for meals at this time of year. The TV chef has made cooking at home easy thanks to her simple recipes.
One of Her Favourites
One of her popular dishes is Tuscan chicken, which serves six people. It uses ingredients many households will already have and can even be made a day ahead to save on time.
Spring is the perfect time to enjoy fragrant dishes that don't take ages to cook. Mary even admitted her Tuscan chicken is one of her own favourites.
The recipe description reads: "Based on a classic, this is one of our favourites for an easy supper. Use chicken breasts, if you prefer." Her dish can also be frozen if you prefer batch cooking your meals or like to save leftovers.
Mary Berry's Tuscan Chicken Ingredients
- Six large skinless chicken thighs, with bone
- Two tbsp plain flour
- Two tsp paprika
- Two tbsp olive oil
- Large onion, finely chopped
- Large red pepper, deseeded and finely diced
- Two garlic cloves, crushed
- Two tsp tomato puree
- 30g sun-blushed tomatoes, chopped
- 150ml white wine
- 150ml chicken stock
- 150ml pouring double cream
- 150g baby spinach
- 55g Parmesan, grated
Method
Start by seasoning the chicken thighs in a bowl. Add the flour and the paprika, then add salt and pepper. Toss together to coat.
Heat the oil in a large, deep frying pan over a high heat. Add the chicken and fry for three to four minutes on each side. Cook until browned and crisp. Set aside on a plate.
Keep the pan on a medium heat and add the onion and pepper. Fry for four to five minutes until soft. Add more oil if needed.
Add the garlic and fry for 30 seconds.
Add the tomato puree, tomatoes, wine (if using) and stock. Stir together before bringing to a boil.
Add the chicken back into the pan along with any juices. Cover the pan and reduce the heat. Let the pan simmer for about 30 minutes, or until tender.
Add the cream and spinach to the pan, stirring until wilted. Remove the pan from the heat and sprinkle with Parmesan. Serve straight away with green vegetables or new potatoes.
