Lettuce is a staple in summer kitchens, used for fresh salads or adding to burgers. However, it can be frustrating when it wilts or turns soggy before use. Many people are unaware that lettuce has a protective skin, similar to other fruits and vegetables, making it more susceptible to spoilage if simply placed in the fridge. Unwashed and uncovered lettuce can dry out and wilt, while its high water content makes it prone to sliminess or mould if not stored correctly.

The Expert's Solution

Laura Fuentes, a food expert and author of five cookbooks, says it takes just a few minutes to keep lettuce fresh. She advises washing the lettuce and then storing it with a paper towel. Fuentes explains: “By spending about 10 minutes prepping one head of lettuce ahead of time, it can now be conveniently available to you when you need it.”

Step-by-Step Guide

  1. Wash with vinegar water: Pour one part white vinegar and three parts cold water into a bowl. Soak the salad leaves for about three minutes, but no longer than five minutes to avoid a vinegary taste.
  2. Dry thoroughly: Use a salad spinner to dry the lettuce. If you don't have one, spread the leaves on a clean tea towel and pat them dry. It is crucial to ensure the lettuce is completely dry before storing, as any moisture will cause spoilage.
  3. Store with a paper towel: Once dry, place the lettuce leaves in a lidded container lined with a paper towel. The paper towel absorbs excess moisture, keeping the lettuce fresh for up to 10 to 14 days.

Washing vegetables before storage might seem odd, but lettuce leaves can harbour bacteria and dirt that speed up mould growth. The acetic acid in white vinegar has antimicrobial properties that help kill harmful bacteria, extending freshness.
