Recipe developer Stacey, founder of Garlic Salt and Lime, says roasting with extra virgin olive oil is a healthier and tastier alternative. The high heat caramelizes the vegetables, giving them a sweet, nutty flavor and a crispy finish that appeals to even picky eaters.

Roasting also preserves more nutrients, including vitamin C, vitamin K, antioxidants, and fiber, compared to boiling.

Simple Ingredients and Steps

To make this dish, you need 225g each of broccoli and cauliflower florets, three tablespoons of extra virgin olive oil, salt, and pepper. Optional toppings include parmesan, soy sauce, sesame seeds, or red pepper flakes.

Preheat the oven to 200C. Chop the vegetables into even florets, toss with oil and seasoning, then spread on a lined baking tray in a single layer. Roast for 25–30 minutes until golden brown and crispy.

Stacey advises using a high smoke-point oil and coating generously to prevent sticking and enhance flavor. After roasting, sprinkle with optional toppings for extra taste.
