Why Pickle Juice Works

Embree explains that acid brightens creamy dishes and elevates all other flavors. In potato salad, the vinegar in pickle juice provides that essential zing. She recommends pouring pickle juice over the salad before folding in the dressing, adding more a tablespoon at a time until the desired flavor is achieved.

Recipe for Pickle Juice Potato Salad

Ingredients: 680g potatoes, one red onion, 50g celery thinly sliced, 112g pickles minced, 267g mayonnaise, one tablespoon mustard, 45ml pickle juice (to taste). Method: Boil potatoes until fork-tender, cool them, chop vegetables, combine, add mayonnaise and mustard, then drizzle pickle juice and fold. Keep chilled until serving.
