Cucumbers can stay fresh for up to 2 to 3 weeks when stored with a paper towel, according to Amy Cross, founder of The Cross Legacy and a culinary expert known for her food preservation methods.
Why cucumbers spoil quickly
In the UK, cucumbers tend to deteriorate rapidly because supermarkets typically shrink-wrap them in plastic. While plastic prevents dehydration and protects their delicate skin during transit, it also traps moisture. When cucumbers sit in a damp fridge environment, condensation accumulates around them, creating a breeding ground for bacteria, mould, and decomposition.
Cucumbers are predominantly water, and once picked, that moisture migrates towards the skin's surface, causing them to weep. In plastic wrapping, the water has nowhere to go and pools on the exterior, leading to mushiness within days.
The paper towel solution
Amy explained: "Place [cucumbers] in a glass container with a clean paper towel at the bottom. They will stay fresh for 2 to 3 weeks."
Paper towels absorb extra dampness seeping from the cucumber, helping them remain crisp for weeks rather than going limp after a couple of days.
Proper storage steps
First, wash the cucumbers in a large bowl of cold water with a few tablespoons of white vinegar. White vinegar is mildly antibacterial, so it will zap mould spores or bacteria on the cucumbers. Leave them to soak for two minutes, then lift them out and lay them on a tea towel. Ensure they are bone dry before refrigerating.
Store them in a glass container with a paper towel lining the base, then place them in the fridge's crisper drawer. If the paper towel becomes soggy, swap it for a fresh one. This method should keep cucumbers crunchy for weeks, allowing for fresh salads and sandwiches throughout the summer.
