MasterChef judge Marcus Wareing has shared his go-to pancake recipe, emphasising one crucial step: warming the pan before pouring the batter. In a TikTok video, the 56-year-old BBC star demonstrated a classic pancake batter using plain flour, which he sieved into a mixing bowl before adding sugar and four egg yolks.
The 'Really Important' Tip
Wareing stressed the importance of achieving a 'nice consistency' by whisking the ingredients with milk until the batter is 'not too thick, not too thin'. He then insisted: 'Just put a little bit of oil into the pan' and warm it beforehand. This step, he said, is 'really important' for perfect pancakes.
Resting the Batter
London-based chef and restaurant owner Nima Safaei echoed the need for patience, advising that a good batter should rest for at least 30 minutes. 'Thirty minutes allows the mixture to relax and improves the texture of the pancakes,' he explained.
Popular Toppings
A BBC poll revealed that 31% of respondents prefer lemon and sugar as their pancake topping, followed by chocolate hazelnut (17%), maple syrup (14%), and bacon (8%). Safaei recommends mascarpone with honey and toasted hazelnuts for an Italian twist, describing it as 'indulgent, balanced, and delicious'. He also noted that 'lemon and sugar is timeless' and 'Nutella is always a favourite'.
