Ingredients for Mary Berry's Sausage Rolls
- Six pork sausages
- One garlic clove (crushed)
- Two tablespoons of sun-dried tomato paste
- Six mild peppadew peppers (chopped)
- A small bunch of parsley (chopped)
- Ready-rolled puff pastry
- One egg (for egg wash)
Step-by-Step Method
Preheat the oven to 220°C (200°C fan/gas mark 7) and line a baking tray with greaseproof paper. Slice open the sausages, remove the meat from the casings, and place it in a mixing bowl. Add the tomato paste, chopped peppadew peppers, parsley, and crushed garlic. Use your hands to mix and squash the ingredients until fully combined.
Wash your hands, then unroll the puff pastry onto a clean work surface. Beat the egg and brush it evenly over the entire pastry surface. Divide the sausage mixture into three equal portions. Shape one portion into a long sausage and place it along the edge of the pastry. Wrap the pastry around the filling, pressing the edges firmly to seal. Trim any excess pastry. Repeat with the remaining two portions.
Cut each long roll in half to create six standard-sized sausage rolls. Use a fork to crimp the edges, then arrange them on the baking tray. Bake for 25 minutes until golden brown and crisp. Serve warm for the best flavor and texture.
