A trained cook and social media influencer has shared a simple way to achieve fluffy and creamy scrambled eggs every time without using cream or milk. TikTok chef Max McCann, known to his millions of followers as Meals with Max and a bestselling cookbook author, says his method produces eggs that are “fluffy, creamy and done in under five minutes”.
The Method
McCann starts by cracking the eggs into a saucepan, adding a small amount of butter, and placing the pan over a low heat. He stirs the eggs continuously throughout the cooking process. Once the eggs start to set, he recommends removing the saucepan from the heat while continuing to stir.
He then suggests alternating between placing the pan back on the heat and removing it again several times. This process should be repeated until the eggs are cooked but remain slightly soft and loose in texture. McCann explained: "Moving it on and off the heat means you can cook it slowly and steadily without them overcooking. There is residual heat in the pan, so even when you do take it off the heat, it’s going to continue to cook. But you’re going to have a lot more control over the heat."
Ingredients and Serving
The recipe calls for 4 eggs, 1 tbsp butter, salt, and pepper. Once the eggs reach the desired consistency, McCann adds sour cream or crème fraîche to make them even richer and creamier. Finish by seasoning to taste before serving.
