The Key Technique: On-Off Heat Control
McCann explains that the trick is to move the pan on and off the heat during cooking. “Moving it on and off the heat means you can cook it slowly and steadily without them overcooking,” he says. He notes that residual heat in the pan continues to cook the eggs even after removing it from the stove, giving you more control over the final texture.
Ingredients and Method
To make his creamy scrambled eggs, McCann uses four eggs, one tablespoon of butter, salt, and black pepper. For extra creaminess, he suggests adding a dollop of crème fraîche or sour cream at the end.
Start by cracking the eggs into a saucepan and adding the butter. Place the pan over low heat and stir continuously. As soon as the eggs begin to set, remove the pan from the heat and keep stirring. Return the pan to the heat, then take it off again, repeating this process several times. Continue until the eggs are cooked but still slightly loose in texture.
