Boiling broccoli and cauliflower is the reason they often end up bland and mushy, but a simple change in cooking method can transform them. Roasting these vegetables in the oven with extra virgin olive oil brings out their natural sweetness and nuttiness, making them far more appetizing.
Why Roasting Is Better
When boiled, broccoli and cauliflower lose much of their natural taste, and vitamins leach into the water, sacrificing nutritional content. Roasting, on the other hand, caramelizes the vegetables, producing a golden, slightly crispy finish that is more appealing, especially for children or fussy eaters.
Stacey, a recipe developer and founder of Garlic Salt and Lime, shared her method: "This roasted cauliflower and broccoli recipe is simple, scrumptious, healthy and super versatile. It can be paired with TONS of different main dishes and requires only five simple ingredients! It doesn't get much better than that."
Ingredients and Method
To make this dish, you need 225g of broccoli florets, 225g of cauliflower florets, three tablespoons of extra virgin olive oil, and salt and pepper. Optional toppings include Parmesan cheese, soy sauce, sesame seeds, or red pepper flakes.
Preheat the oven to 200C. Chop the vegetables into evenly sized florets, place them in a large bowl, and toss with olive oil, salt, and pepper until well coated. Line a baking tray with greaseproof paper and arrange the florets in a single layer, ensuring space between each for even caramelization.
Roast for 25 to 30 minutes until golden brown. The result is crispy, flavorful, and healthier than boiled vegetables. Stacey advises using a high smoke-point oil and not skimping on it: "A high smoke-point option is important so we don't cloud up the oven! I like to oil my veggies generously. You can use a little less if preferred but don't skimp too much because oil adds excellent flavour and keeps vegetables from sticking to the pan."
Once out of the oven, you can add extra toppings like Parmesan, soy sauce, sesame seeds, or red pepper flakes for even more flavor.
