Nigella Lawson's scrambled eggs recipe, which adds green chilli and crispy tortilla strips, has been hailed as 'sublime' by fans. The celebrity chef and new Great British Bake Off judge originally shared the recipe in Nigella Express and later on her website, titling the dish 'Mexican eggs'.

A Simple Addition with Big Flavour

Lawson wrote: "This is not only the best way to start the day, but the best way to end it, too. You can make it even more of a meal by serving some refried beans alongside, but I love it just as it is. It also happens to be one of the greatest hangover cures around."

She added: "You know, I'm tempted to consider overdoing it partywise just to have an excuse to whip up a batch of these. But then, they are so good that there is always a reason to eat them; no need to scout around for excuses."

The recipe has proved popular with fans. One wrote: "Absolutely delicious!, for a lazy Saturday supper. I just doubled the amount of veggies and tortillas (this time whole-wheat) and added two more eggs. It does the job feeding two hungry grown-ups!"

The Recipe

The serving size for this recipe is two people. Ingredients include two tablespoons of vegetable oil, two soft corn tortillas, one tomato (deseeded and roughly chopped), one spring onion (roughly chopped), one green chilli (deseeded and roughly chopped), four large eggs (beaten), and 1/4 teaspoon of Maldon salt.

To make it, heat the oil in a frying pan, roll up the tortillas into a sausage shape, and snip them into strips with scissors straight into the hot oil. Fry for a few minutes until crisp and golden, then set aside in a bowl. Add the chopped tomato, spring onion, and green chilli to the hot pan and stir for a minute or so with a wooden spoon. Return the tortilla strips to the pan, add the beaten eggs and salt, and move everything around as you would scrambled eggs on their own. Once the eggs are set, remove from the heat and continue stirring until cooked to your liking.
