Goldie's, a new New York-style pizza slice and pie shop and bar, has opened on Colquitt Street in Liverpool, taking over the former BrewDog site in the Ropewalks district. The venue is the latest project from Daniel Gillbanks, David Scowcroft, and Daniel Kelly, the team behind Almost Famous Burgers and The Dog & Collar.
Inspired by New York City
Inspired by Daniel and David's visits to New York City over more than half a decade and their appreciation of the city's pizza slice shop culture, the team served PINS Social Club guests slices over the past two years before opening their brand-new venue. Goldie's opened this week and is both a bar and a slice-and-pie shop.
Menu and Atmosphere
The drinks menu includes 20 taps of classic beers, popular local and craft options, frozen drinks, a focused wine selection, and a £5 Spritz serve. Food-wise, the main focus is 22-inch New York-style pizzas, served either by the slice or as whole pies. Live sport features across the space, with music said to be central to the atmosphere and the views into the kitchen giving 'the pizza-making process its own kind of theatre'.
Expansion Plans
Daniel Kelly, Managing Director of Roadtrip Hospitality, said: 'It’s certainly been an exciting few years for the business, growing from just one site to now five with more in the works. The popularity of Goldie’s within our existing PINS site on Duke Street has grown and grown over the years and it was about time that it received its own deserving standalone home. With rapid expansion plans underway, we’re busy recruiting and shaping up our senior team to support the continued growth and success of the business. I’m really excited for what the next few years will bring.'
Former BrewDog Site
Goldie's has taken over the former BrewDog site in the Ropewalks district, which originally opened its city venue in 2014. On March 2, BrewDog announced it would shut 38 bars across England and Scotland, resulting in the loss of 484 jobs, despite the company being snapped up in a rescue deal by a US firm. The company was founded by friends James Watt and Martin Dickie, with the Liverpool venue being the 10th BrewDog bar to launch 12 years ago. This year, the company confirmed that consultants AlixPartners had been drafted in after the firm failed to turn a profit in recent years. Chief executive James Taylor told staff in an internal email that a series of meetings would take place on Monday, March 2, with bars closed due to licensing requirements. However, the Liverpool ECHO were able to confirm that its venues, including the city centre site, were actually closing for good.
