Ebony Joseph, a 30-year-old pastry chef, left Southend-on-Sea, Essex, in April 2025 to start a new life in St Lucia after struggling with her mental health and feeling trapped in a cycle of working only to pay bills. She gained full St Lucian citizenship in September 2025 through her father's family roots.
From Essex to the Caribbean
Ebony had visited St Lucia on holiday and fell in love with the laid-back lifestyle. She decided to take a leap of faith and move permanently. She arrived with just £2,000 in savings and relied on friends and locals for support. 'If I hadn't had somewhere to stay when I arrived, I would've been in trouble,' she said. She sold cakes to get by and built connections through the community.
In May 2026, she landed a job as a pastry chef at a hotel after impressing an executive chef with her cheesecake. 'He tried it, looked at my CV and offered me a job. Facebook is a huge way of finding work out here,' she said.
Quality of Life and Wellbeing
Ebony says the outdoor lifestyle and connection to nature in St Lucia have dramatically improved her wellbeing. 'In England, if I was feeling low, I'd stay indoors. Now, if I'm having a bad day, I can go for a swim or spend time at the beach,' she said. She has more energy, has lost weight, and feels happier. 'My friends and family say I look happier and healthier.'
She enjoys meals out for as little as £5 a night and appreciates the free activities available, such as cookouts by the river and beach time. 'There is more to life than working nine to five and partying every weekend,' she added.
Future Plans and Advice
Ebony is now working towards launching her own tour company and interactive travel guide. Reflecting on her move, she said, 'I didn't want to look back on my life and wonder 'what if?' Take the risk, because if you don't, you'll never know what could have happened.'
She advises others considering a major move: 'Do what's best for you. The only person who can change your life is you.'
