Food expert Kris Osborne recently explained that her secret recipe for making speedy scrambled eggs comes down to a very unconventional ingredient that is most likely already in your fridge: mayonnaise. Writing for Simply Recipes, Osborne said: "The difference comes down to one key ingredient: mayonnaise. Otherwise, there was nothing notably different about the recipe or what you'd expect from a microwave egg method. It uses two eggs, a spoonful of mayo, and a sprinkle of salt and pepper. The fact that it cooks in about one minute is almost beside the point. After one try, I was converted."

Why Mayonnaise Works

Osborne explained that the combination of mayo and raw eggs might sound odd, but mayonnaise is already made from egg yolks and oil, and she often mixes cooked eggs with mayo to make egg salad. "It's really just a different order of operations," she noted. The fat in the mayo adds extra richness to the eggs, helping to give them a soft and tender texture. Typically, this texture is achieved by cooking eggs over low heat on the stove, but the mayo allows for a quicker method in the microwave.

Foolproof Recipe

To ensure you have the ratios correct, Osborne shared her foolproof recipe. First, crack two eggs into a small bowl, then add one tablespoon of mayonnaise. For extra flavour, season with salt and pepper now, and whisk until you get a smooth mix. Pour the eggs into a lightly greased ramekin or small microwave-safe bowl, and microwave on high for 45 to 60 seconds. Since microwaves vary, it is better to start with 45 seconds. Osborne said: "You're looking for the eggs to be just set but still slightly moist on top. They'll continue to firm up for a few seconds after you pull them out."

Versatile Base for Other Recipes

This speedy scrambled egg trick can also serve as a foundation for other recipes. Osborne suggested making them into an English muffin sandwich with cheese and a protein of your choice. She added: "I'm still a fan of the stovetop for a big Sunday brunch, but for the weekday morning rush, this has become a favourite. It's one of those rare internet tips that actually lives up to the hype. If you've written off microwave eggs before, I recommend giving this version a shot. You might be as surprised as I was."
