When exposed to heat, proteins in meat contract, squeezing out juices. Salmon, with less fat than some meats, is particularly prone to moisture loss. Placing it directly in the air fryer or oven without protection often leads to overcooked, bland results.

Coating salmon generously with olive oil creates a protective barrier that minimises moisture evaporation during cooking. This barrier also promotes even heat distribution, reducing dry patches and ensuring consistent cooking. Additionally, olive oil helps caramelise the surface, delivering crispier skin and enhanced flavour.

How to Make Juicier Salmon

Ingredients (per person):

  • One salmon fillet
  • One tablespoon of olive oil
  • Salt and pepper
  • One teaspoon of lemon juice (optional)
  • One teaspoon of smoked paprika (optional)
  • One teaspoon of garlic powder (optional)

Method:

  1. Place the salmon fillet in a large bowl and drizzle with olive oil. Use a spoon or clean hands to coat thoroughly.
  2. Add seasonings of your choice, such as lemon juice, garlic powder, smoked paprika, salt, and pepper, to create a marinade.
  3. Preheat your air fryer or oven to 200°C. While waiting, spoon any leftover oil over the salmon and let it absorb the flavours.
  4. Line the air fryer basket or oven tray with baking paper and place the salmon on it.
  5. Cook for 8–12 minutes in an air fryer or 12–15 minutes in the oven, checking for crispiness from the eight-minute mark. Timings may vary.

Once ready, the salmon will be beautifully rich, succulent, and full of flavour.
