Chef's secret: Bake fried eggs in oven instead of frying pan

Fried eggs can be made without a frying pan, according to one of Britain's leading chefs, who bakes them in the oven instead. Will Murray, one of the two chefs who operate Fallow in London, has shared how they produce perfect fried eggs for their guests during a busy breakfast and brunch shift.

The baking tray method

In a TikTok clip from July, Will explained: "On breakfast service, we're frying upwards of 50 to 100 eggs a day. What's the hack? We don't fry our eggs, we bake them in a tray."

Rather than frying the eggs in a traditional pan, the chefs use a baking tray featuring wide moulds, similar to a Yorkshire pudding tin. Simply place a small amount of oil in each mould, then crack the eggs straight into the tray.

Oven temperature and timing

Bake the eggs in the oven for just two and a half minutes at 160 °C (320F). The secret is to maintain a touch of humidity within the oven. Will noted: "At home you can use a small pan of water. Look at those egg yolks."

After the eggs are removed from the oven, season them with salt and pepper. Will went on: "Absolutely perfectly fried eggs. Really consistent every time."

Reaction from food experts

The culinary specialists at Simply Recipes were in agreement. Sarah Epperson wrote: "Say hello to the easiest way to make fried eggs for a crowd. In fact, this sheet pan technique for frying eggs might just be the best thing to happen to breakfast since oven baked bacon."
