Ripe avocados can be kept in perfect condition for up to a week longer simply by storing them in the fridge, according to food experts at America's Test Kitchen. The cold temperature slows the fruit's metabolism and pauses the ripening process, preventing the mushy texture that often spoils avocados within days.

Expert advice on extending avocado life

The culinary experts shared their advice with their 981,200 TikTok followers on how to get the most out of avocados. A culinary expert explained: "So you've finally achieved a perfectly ripe avocado. Did you know you can extend its life? Storing unripe avocados at room temperature is the best way to ensure they ripen evenly and that their creamy consistency doesn't get mushy."

"But once they're fully ripened, the fridge is an avocado's best chance at holding on to its flavour and texture. Below about 50 degrees the metabolism of the fruit slows way down so the ripening process gets put on pause."

How the fridge works as a pause button

Simply placing ripe avocados in the fridge is the most effective way to keep them in top condition for longer. The expert added: "The enzymatic breakdown of the cells walls that causes softening virtually stops at this temperature so if you put a perfectly ripe avocado in the fridge, it will stay perfectly ripe for another week."

"Just keep in mind the cold temperatures are also associated with chilling injury, but you need to store the fruit for just a few days, toss it in the fridge and make your guacamole when you're ready for it." The fridge brings the temperature down below 5 degrees, slowing the fruit's metabolism and preventing the unpleasant mushy texture.

Why avocados turn brown

Avocados deteriorate rapidly due to a chemical reaction that occurs when the flesh is exposed to oxygen. Avocados contain an enzyme called polyphenol oxidase (PPO). When you cut or mash the fruit, you rupture its cells, allowing oxygen to come into contact with this enzyme.

The oxygen triggers the PPO to react with naturally occurring compounds within the fruit, producing a brown pigment known as melanin. Riper avocados contain more potent enzymes, meaning they discolour even more rapidly. To slow the process, press cling film directly onto the cut surface or store it in an airtight container to limit exposure to oxygen. Alternatively, squeezing lemon or lime juice over the avocado can also help delay the browning.
