Pasta remains a beloved staple of countless lunches and evening meals. It is quick to prepare and incredibly versatile, yet occasionally it does not deliver the punch of flavour we are after.
The Simple Switch for Better Pasta
Most people prepare pasta in a saucepan of boiling water, with numerous recipes suggesting generous salting before adding the pasta. However, its taste can be further elevated if you abandon the plain boiling water approach entirely. Cooking the pasta in chicken or vegetable stock can make it "delicious." Even celebrated chef Marco Pierre White has experimented with this technique himself.
Home Cooks Share Their Experience
A Reddit user posted on the platform seeking guidance about using stock rather than water for cooking pasta. Fellow home cooks responded, with one stating: "I do this a LOT. I love the flavour it gives off. I've used beef and chicken broth in dishes to cook pasta depending on the meat in the dish and it always works fine. You could use veggie broth too depending on the dish."
Another contributor said: "I will never cook pasta in plain water again! The pasta water was so rich and delicious." A third person wrote: "Boiled pasta in stock today. My mind is blown. How could I not think of doing this ever before? It seems so obvious. Amazingly tasty. Just go light on the salt later."
Chef Marco Pierre White's Technique
Marco Pierre White used stock when creating his spaghetti recipe while collaborating with Knorr. He brought a pan of water to the boil and incorporated a drizzle of olive oil before adding a vegetable stock cube. He said: "Vegetable stock pots just to season the water rather than salt. Don't throw away the water, keep it for soups, sauces and stews."
Other Chefs Endorse the Method
Chef Mike from Detroit 75 Kitchen also incorporates stock when preparing pasta dishes. In a TikTok clip, he demonstrated how to create his signature pasta recipe. He placed the pasta in a pan initially before adding the stock and allowing it to cook for eight to 10 minutes. Mike said: "When you add chicken stock, it's just so luxurious. Make sure to add good salt."
TikTok user @thetastystir also relies on stock when creating pasta meals. She explained: "Boiling pasta in stock instead of water is one of the easiest ways to add flavour. I used my turkey broth for this one, then sautéed smoked fish, vegetables and mixed with leftover pepper sauce. The flavours were unreal."
This simple swap not only enhances the taste of the pasta itself but also enriches the cooking liquid, which can be repurposed for soups, sauces, and stews. So next time you cook pasta, consider reaching for stock instead of water for a more flavourful dish.
