Salmon is a popular summer dinner choice, but it can easily become dry and overcooked. However, a simple ingredient can keep it juicy and flavorful. Katie Workman, cook and founder of TheMom100, recommends coating salmon with olive oil before baking to maintain moisture.
Fish contains less fat than other meats, so it lacks a protective fatty layer against high heat. This can cause moisture to evaporate during cooking, leading to dry results. Olive oil addresses this by forming a barrier on the fish's surface.
Why Olive Oil Works
According to Workman, "This simple olive oil, garlic, and herb marinade adds flavor, but more importantly, it helps protect the salmon from becoming dry in the oven." She added, "The olive oil-based marinade for this fish ensures that it doesn't dry out when baking."
The oil reduces water evaporation from the outer layer, keeping the fish tender and locking in juices. It also enhances salmon's natural richness and helps crisp the skin for ideal texture without dehydration.
How to Make Juicier Salmon
Preparation takes about 10 minutes, with oven cooking time of 10 to 13 minutes. You will need:
- Two salmon fillets
- Two tablespoons of olive oil
- One teaspoon of minced garlic
- One teaspoon of oregano or thyme
- One lemon (for zest and juice)
- Salt and pepper
Start by mincing garlic into fine pieces. Squeeze the lemon for juice and zest the yellow rind. Preheat the oven to 200°C. In a small bowl, combine olive oil, garlic, herbs, lemon juice, lemon zest, salt, and pepper.
Place salmon on a baking tray. To prevent sticking, drizzle a tablespoon of olive oil on the tray or use cooking spray. Spoon the marinade over the salmon, working it into the flesh until fully coated. Pour any leftover marinade into the tray.
Roast for 10 to 13 minutes until cooked through. The salmon is ready when the skin turns golden brown, and the flesh is moist and flakes easily at the edges. Check after 10 minutes, as salmon can dry out quickly if left too long.
Resting for Best Results
Once cooked, remove from the oven and let rest for three to five minutes. Salmon continues to cook slightly off heat, and resting allows moisture to redistribute evenly, resulting in a juicier final dish.
