Avocados stay ripe for weeks with one simple fridge trick

Ripe avocados can be kept fresh for up to another week simply by storing them in the fridge, according to culinary experts at America's Test Kitchen. The cold temperature slows the fruit's metabolism, pausing the ripening process and preventing the mushy texture many people dislike.

Why the fridge works

In a TikTok post shared with their 981,200 followers, America's Test Kitchen explained that storing unripe avocados at room temperature is best for even ripening and creamy consistency. However, once fully ripened, the fridge becomes the avocado's best chance at holding onto its flavour and texture.

Below about 50 degrees Fahrenheit, the fruit's metabolism slows down significantly, putting the ripening process on pause. The expert noted that the enzymatic breakdown of cell walls, which causes softening, virtually stops at this temperature. As a result, a perfectly ripe avocado placed in the fridge will stay perfectly ripe for another week.

Chilling injury warning

The expert also cautioned that cold temperatures are associated with chilling injury, but if the fruit is stored for just a few days, it can be tossed in the fridge and used to make guacamole when ready. The fridge acts like a pause button by dropping the temperature below 5 degrees Celsius, slowing metabolism and preventing the mushy texture.

Why avocados turn brown

Avocados go off quickly due to a chemical reaction when the inside meets oxygen in the air. The fruit contains an enzyme called polyphenol oxidase (PPO). When cut or mashed, the cells are broken, allowing oxygen to touch the enzyme. This reaction creates a brown pigment called melanin. Riper avocados have stronger enzymes, so they turn brown even faster.

To slow down browning, press plastic wrap directly onto the cut surface or use an airtight container to keep oxygen away. Alternatively, squeezing lemon or lime juice on the avocado can slow the process.
