A home cook has shared a simple recipe for making delicious homemade bread boules using just two ingredients - one of which you've probably never considered before.
The Recipe
Laura Nightingale is well accustomed to sharing her culinary tips online, and in her most recent video she outlined her recipe for a feta, tomato and cheese bread. The particular cheese involved is rather unconventional in baking, however, which she went on to explain in a TikTok video. "The cottage cheese mistake everyone is making is not putting it with flour - because those two ingredients can make bread," Laura elaborated. "That's right, you can make homemade bread with just two ingredients - and add any extra flavours you fancy."
For Laura, those extra flavours come in the form of chopped tomatoes and basil, which she combined with her flour and cottage cheese until everything came together to form a dough. She then floured her work surface, placed the dough on it and shaped it into a boule.
Cooking Instructions
"Once you get the boule-shape, you can score it on top with a sharp knife then cook it in the air fryer or the oven until you get a lovely, crunchy and crispy edge - and a soft and fluffy middle," Laura continued. Revealing her finished creation, Laura tore into her loaf and enthused: "It tastes absolutely delicious. It's lovely on its own or with butter and you can cook it whenever you fancy because it's a small little loaf and perfect for one or two people."
Laura's ingredients: 3 heaped tbsp (60g) self raising flour (or plain/all purpose + 1/2 tsp baking powder), 2 tbsp (50g) cottage cheese, 1 tbsp chopped feta, 1 tbsp tomato, 1 tsp basil. And regarding the cooking process, she added: "Air fry on 180C for 20 minutes (air fry mode) or oven bake on 180C for 35 minutes. If it's not cooked in the middle, turn it over and cook for a further 3-5 minutes without baking paper underneath."
Reactions
Writing in response, one TikTok user offered an additional cottage cheese suggestion: "To add more protein, a tomato soup made with cottage cheese, tin of tomatoes, veg stock salt, pepper and herbs of taste, blend together and heat slowly on the hob." A second person noted: "I used this for pizza base either cottage cheese or natural/Greek yogurt." While a third enthused: "I make bread by combining cottage cheese, eggs, oats and different nuts/seeds. It's delicious!" And a fourth commented: "Thank you so much, made it this morning and it's yummy."
