How to Make Syrup from Strawberry Tops
Elly shared her method on Instagram, demonstrating how to repurpose the greenery while avoiding food waste. She placed the strawberry tops into a container or jar and covered them with an equal weight of sugar. After sealing the lid, she gave it a vigorous shake and placed it in the fridge. She recommends shaking the jar each time you open the fridge door.
After a day or two, the mixture transforms into a wonderfully aromatic strawberry syrup. If the tops are not particularly juicy and the sugar has not fully dissolved, Elly suggests adding a splash of water to help the process along. Once the sugar has dissolved, strain the syrup into a bottle and store it in the fridge.
Elly notes that the syrup will keep for weeks due to the sugar content. She has tested its longevity and claims it can last up to six months when stored carefully in the fridge.

The syrup can be used in drinks, on ice cream, in fruit salads with yoghurt, and more. The possibilities are endless.
