Steam-Frying: A Simple Alternative to Oil and Butter

Fried eggs are a breakfast staple, but cooking them with oil or butter often leads to a greasy mess and rubbery texture. Kaitlin, a cook and founder of Modern Vintage Cooking, has shared a technique that avoids these pitfalls: steam-frying. Instead of oil or butter, she uses just a splash of water to create steam that gently cooks the egg from above, eliminating the need to flip it and reducing the risk of burning.

“I've discovered that there is another way. It's called ‘steam-frying.’ You can do it with all kinds of foods, but I love using the method for fried eggs. It's kind of a cross between poaching (which I also love, but is a bit of a hassle as well) and frying,” Kaitlin said.

Why Water Works Better Than Oil or Butter

Many home cooks use too much oil or butter, resulting in a greasy, burned egg. The high heat required for frying can also cause the egg to overcook quickly. Steam-frying addresses these issues by using water to create steam, which cooks the egg more evenly and at a lower temperature. The steam also cooks the top of the egg, so flipping is unnecessary—a common step that often leads to broken yolks.

“Steam cooks the whole egg at the same time so it will cook quickly and will also cook the top so you get a perfect golden and jiggly yolk without having to flip it,” Kaitlin explained.

How to Steam-Fry the Perfect Egg

The method is straightforward and requires only a few ingredients and tools:

  • A teaspoon of water
  • One egg
  • A frying pan with a lid
  • Cooking spray

Start by heating the frying pan over medium-high heat. Spray the pan lightly with cooking spray, then crack the egg into a small bowl (this makes it easier to remove any shell fragments). Once the pan is hot, pour the egg into the pan. Reduce the heat to medium and let the egg cook for one minute, until the whites begin to turn opaque but are not fully set.

Next, pour a teaspoon of water around the edges of the pan. Lower the heat and immediately cover the pan with the lid. Cook for one more minute, then remove the lid. The egg should be perfectly cooked with a set white and a runny, golden yolk—all without the mess or hassle of traditional frying.

A Mess-Free Breakfast in Under 5 Minutes

Kaitlin’s steam-frying method is not only effective but also quick. The entire cooking process takes less than five minutes, and because there’s no oil splatter or sticky residue, cleanup is minimal. Once mastered, this technique can become a go-to for consistently perfect fried eggs.

“Steam frying is a really easy cooking technique and once you master it you will always make a perfectly cooked egg in less than five minutes without much effort,” Kaitlin said.
