Baking experts recommend a simple ingredient swap—using cream and lemonade instead of butter and milk—to achieve lighter, fluffier scones with a tender crumb.
Cream replaces butter for ease and softness
Most scone recipes call for flour, caster sugar, milk, and a beaten egg, but swapping the butter for cream makes the dough easier to mix, especially by hand. Cream combines effortlessly with flour and adds richness, moisture, and tenderness, while also producing a beautifully browned crust when baked.
King Arthur Baking notes: “Using heavy cream as a base, cream scones can feel like a morning indulgence. Ultra-tender and cake-like, they're softer than butter-based scones. Reason to love them: They’re quick and easy to make and don’t require working the fat into the dry ingredients.”
Lemonade adds lightness
The carbon dioxide in lemonade acts as a leavening agent, similar to baking powder or yeast, aerating the dough and helping the scones rise evenly for a lighter texture. It also adds a subtle sweet lemon flavor.
According to Taste.com.au, combining 125ml of thick cream with 125ml of lemonade yields deliciously soft and sweet scones. For an extra lemon kick, they suggest serving with lemon curd and cream instead of jam.

All the planets aligned the day I discovered lemonade scones. No pesky fridge-cold butter that refuses to yield to the flour.
