Former Great British Bake Off contestant Briony May Williams has shared a simple hack for making savoury scones that require no eggs, butter, or milk. Instead, a single ingredient—hummus—creates a dough that she describes as 'insanely delicious'.

How It Works

In a TikTok video, Williams demonstrated that hummus, plain flour, and baking powder are all that is needed to form a quick dough. The hummus provides enough moisture to replace traditional wet ingredients, while also adding flavour. She added mixed herbs and smoked paprika for extra taste.

The dough comes together in seconds and can be cooked in an air fryer at 180°C for eight minutes or in a conventional oven at 200°C (fan) for ten minutes.

Full Recipe

Ingredients: 160g hummus, 65g plain flour, one tsp baking powder, two tsp dried chives, one tsp smoked paprika, 1/2 tsp salt, one tbsp milk alternative, two tsp mixed seeds.

Method: Mix all ingredients together in a bowl to form a soft dough. Divide into four pieces. Place on a baking tray, brush with milk alternative, and top with seeds. Bake in the oven at 200°C (fan) for 10 minutes, or in the air fryer at 180°C for eight minutes. Allow to cool slightly before serving.
