The traybake serves four and uses basic ingredients: a bag of new potatoes, four garlic cloves, eight sausages, one red onion, olive oil, three tablespoons of pesto, 200g of frozen peas, and seasoning. The method is straightforward: parboil the potatoes, flatten them, then roast everything together.

O'Hare notes that the oven does most of the work, freeing up time. The sausages turn succulent, and the potatoes become crispy after being flattened. She recommends giving sausages a five-minute head start in an air fryer for extra texture, though this step is optional.

Step-by-Step Cooking Method

Preheat the oven to 220°C (200°C fan). Boil the new potatoes for 10 minutes, then drain and transfer to a roasting dish. Gently press each potato with the base of a glass to flatten. Add the red onion, garlic, and sausages, ensuring space for even cooking. Drizzle with oil and season with salt and pepper.

Roast for about 35 minutes until the sausages are cooked and potatoes are golden. Remove from the oven, stir in the frozen peas and pesto, then return for five more minutes. Serve hot.

O'Hare discovered this traybake two years ago and it has become a regular meal. She says it ensures plenty of vegetables are included in one dish. The recipe is adaptable and can be customised with different vegetables or sausages.
