A simple potato salad can sometimes lack flavour, but home cooks have a 'secret ingredient' that transforms it into something amazing. The key is pickle juice, according to recipe blogger Glenda Embree.
Why Pickle Juice Works
Glenda Embree of the recipe blog Making Homemade Easy insists that pickle juice is the secret to a delicious potato salad. She says, "I have a secret ingredient in potato salad. Pickle juice. I know. It sounds weird, but trust me. It's the bomb in the bomb-diggety for this delicious potato salad."
The tangy vinegar in pickle juice lifts and enhances the flavours in creamy dishes, and potato salad is no exception. Glenda recommends drizzling the pickle juice over the ingredients before folding in the dressing, and adding more a tablespoon at a time for extra zing.
Recipe for Perfect Potato Salad
To make this enhanced potato salad, you'll need 680g of potatoes, one red onion, 50g of thinly sliced celery, 112g of minced pickles, 267g of mayonnaise, one tablespoon of mustard, and 45ml of pickle juice (to taste).
Start by washing and chopping the potatoes into bite-sized chunks. Boil them in salted water for about 15 minutes until tender, then drain and cool them thoroughly in the fridge or freezer. Combine the cooled potatoes with the chopped vegetables in a large bowl.
Spoon the mayonnaise and mustard on top, swirl them together, then drizzle with pickle juice. Fold everything until well coated, chill, and serve. The salad keeps for several days, though it's likely to disappear quickly.
