Camille Berry, writing for Simply Recipes, revealed that mayonnaise is a “non-negotiable” ingredient when making burgers from scratch. She explained that even culinary schools use this trick to ensure burgers remain moist and flavorful on the grill.

Berry noted that while premade patties are convenient, making burgers at home with this secret ingredient yields far tastier results. She heads straight for ground beef at the supermarket and then reaches for mayonnaise as her “secret weapon.”

How Mayonnaise Works

The science behind this hack lies in the fat content of mayonnaise. Adding mayo introduces extra fat into the beef mince, which keeps the meat juicy because the mayo liquefies at a lower temperature than the meat's own fat. This helps the burger retain moisture during cooking.

Mayonnaise also promotes a richer brown crust on the outside of the burger. Jeremy Yoder, culinary editor at ThermoWorks, explained to Simply Recipes that the oil in mayo displaces water at the burger's surface, allowing the fat to heat and brown the meat more evenly.

Flavor and Application

Beyond texture and color, mayonnaise enhances flavor with a slight tang from its vinegar content, balancing the natural richness of the beef. To incorporate it, add one tablespoon of mayo per pound (about 450g) of beef mince, mixing gently to avoid overworking the meat, which can result in a dense, tough burger.

This technique can also be applied to other lean proteins such as chicken, turkey, or game, making it a versatile tip for any grilling session.
