Mary Berry's sausage and red pepper hotpot, an all-in-one-pan dinner, has amassed more than 100 five-star reviews online and calls for only a handful of ingredients. The recipe serves between four and six people and is ready in fewer than 35 minutes.
Simple and full of flavour
The recipe notes state: "Sausages are a comfort food that the whole family can enjoy, and this all-in-one-pan dish is simple yet full of flavour." It advises serving with a green vegetable for a complete and colourful meal.
Ingredients and method
The ingredients include one tablespoon of sunflower oil, eight spicy pork sausages, four rashers of smoked bacon finely chopped, one sliced onion, one red pepper cut into large pieces, one large peeled and diced carrot, one crushed garlic clove, 300ml chicken stock, a 400g tin of chopped tomatoes, two tablespoons of sun-dried tomato paste, two fresh thyme sprigs, 250g baby new potatoes sliced into thick discs, salt and freshly ground black pepper, and freshly cooked green vegetables to serve.
To prepare, heat the oil in a large deep frying pan or casserole dish over a high heat. Fry the sausages until browned all over, then remove and set aside. Add the bacon and fry until crisp, then remove and set aside with the sausages. Add the onion, red pepper, carrot and garlic, frying over a high heat for five minutes before adding the stock, tomatoes, tomato paste and thyme. Bring to the boil, then add the potatoes, salt and pepper. Return the bacon and sausages to the pan, cover and simmer over a gentle heat for 20 minutes.
Serving and storage
Remove the lid and continue simmering for a further 10 minutes, or until the sauce has reduced slightly and the vegetables are tender. Serve alongside freshly cooked green vegetables. The dish can be prepared up to eight hours in advance and kept chilled in the fridge. When reheating, ensure the sauce is brought back to the boil.
