Mary Berry's sausage and red pepper hotpot meal has received more than 100 five-star ratings online and requires few ingredients. The recipe serves four to six people and is ready in under 35 minutes.
Simple yet flavourful comfort food
The recipe notes said: "Sausages are a comfort food that the whole family can enjoy, and this all-in-one-pan dish is simple yet full of flavour. Serve with a green vegetable for a complete and colourful meal."
Ingredients include one tablespoon of sunflower oil, eight spicy pork sausages, four rashers of smoked bacon finely chopped, one sliced onion, one red pepper with seeds removed and cut into large pieces, one large carrot peeled and diced, one crushed garlic clove, 300ml chicken stock, a 400g tin of chopped tomatoes, two tablespoons of sun-dried tomato paste, two fresh thyme sprigs, 250g baby new potatoes with skin on sliced into thick discs, salt and freshly ground black pepper, and freshly cooked green vegetables to serve.
Quick preparation method
The method starts by heating the oil in a large deep frying pan or casserole dish over high heat. Add the sausages and fry until browned all over, then remove from the pan and set aside. Add the bacon to the pan and fry for a few minutes until crisp, then remove and set aside with the sausages.
Add the onion, red pepper, carrot and garlic. Fry for five minutes over high heat, then add the stock, tomatoes, tomato paste and thyme. Bring to the boil. Add the potatoes with salt and pepper.
Simmering and serving
Return the bacon and sausages to the pan, cover and simmer over gentle heat for 20 minutes. Remove the lid and simmer for another 10 minutes, or until the sauce has reduced a little and the vegetables are tender. Serve with freshly cooked green vegetables.
This dish can be made around eight hours ahead and chilled in the fridge. When reheating, make sure the sauce comes to the boil.
