The recipe notes state: 'This is my standby pasta supper as it is so delicious, so quick, and everyone loves it. Great for everyday use or casual supper parties, too. Its base is a creme fraiche pasta sauce, and it's topped with crispy Parma ham, which gives tons of flavour and great texture.'
Ingredients include 350g penne pasta, two 80g packs of Parma ham, 250g chestnut mushrooms, 200g full-fat creme fraiche, 100g grated Parmesan, and two tablespoons of chopped parsley. For special occasions, Mary recommends adding asparagus tips four minutes before the pasta is done.
Simple Preparation Steps
The method involves cooking the pasta, frying the Parma ham until crisp, then frying the mushrooms in the same pan. Creme fraiche is added and brought to a boil, then the pasta, Parmesan, and parsley are stirred in. The dish is seasoned generously and served with green salad and crusty bread.
Mary advises that if using reduced-fat creme fraiche, it should be stirred in at the end to prevent splitting.
