Frozen oven chips can be transformed into crispier, tastier sides with a simple homemade coating that takes just five minutes to prepare. The method, published by Tesco, involves tossing the chips in vegetable oil and a four-ingredient spice blend before cooking.

Simple seasoning blend for better chips

To make the coating, arrange 500g of frozen oven chips on a large baking tray and coat them with vegetable oil. Then dust the chips with half a teaspoon of smoked paprika, a quarter teaspoon of sea salt flakes, half a teaspoon of dried rosemary and a quarter teaspoon of garlic granules.

For those who prefer extra heat, a quarter teaspoon of cayenne pepper can be added. The chips should be thoroughly tossed to ensure each piece is evenly covered in the seasoning, then cooked according to the packet instructions.

How the coating improves texture and flavour

The vegetable oil helps the chips emerge golden and crispy, while the spice combination delivers a tangy, herby flavour. The recipe description notes: "These aren't just any oven fries, they're covered in an array of tangy and exciting flavours. Enjoy a little lift from the herbs and spices, then bake them until golden and crisp."

This technique also works in an air fryer, if the packet directions recommend it, and may produce even crispier results thanks to the air circulation in the device.

Homemade alternatives and sweet potato fries

For those with time to prepare chips from scratch, Maris Piper potatoes are the ideal choice, with roughly 350g sufficient for two people. Boil them for three minutes, allow them to steam-dry for five minutes, then transfer to a baking tray. Drizzle with a little oil and season with salt before placing them in a 220°C/200°C fan oven for 18 to 20 minutes, turning them over and baking for a further eight minutes.

For sweet potato fries, rinsing is not required, though Tesco advises adding a dash of olive oil, sugar and salt before baking to enhance the flavour.
