Oven-baked chicken kebabs with a zingy tomato and onion salad and a garlic yogurt sauce can be on the table in just half an hour, offering a fresh and flavourful dinner that is simple to prepare.
The recipe, from Simply Home Edit, involves a seemingly long list of ingredients, but the kebabs can be prepped in around 10 minutes and cooked in 20. The yogurt sauce can be made the day before to speed up the process even further.
Easy preparation and cooking
The chicken mixture is shaped into a rectangle on a baking sheet, scored into strips, and baked in the oven at 225C for 22-25 minutes until golden brown. The tomato and onion salad adds a pleasant zing, while the chicken remains juicy and savoury.
One tip from the tester is to watch the kebabs carefully while they bake. After the first ten minutes, the meat mixture released a lot of juices that needed to be carefully removed to avoid a mess in the oven.
Ingredients and method
The kebab mix includes one kg of chicken mince, a grated brown onion, freshly minced garlic, tomato paste, sweet paprika, dried cumin, onion powder, garlic powder, oregano, sea salt flakes, cracked black pepper, and finely chopped coriander (or flat-leaf parsley). The garlic yogurt sauce combines plain Greek yogurt, whole-egg mayonnaise, minced garlic, lemon juice, olive oil, and sea salt flakes. The salad features cherry tomatoes, red onion, flat-leaf parsley, sumac, olive oil, lemon juice, and a pinch of sea salt.
To assemble, spread flatbreads with hummus (optional), then add the meat, sauce, and salad. The kebabs can be served with lemon wedges and are enjoyed fresh from the oven.
